Amaranth Red Army is a fast growing and prolific leaf in the height of the summer months. The plant produces pretty bright cherry red leaves ideal for salads, garnishes or any dish that requires a splash of colour. The flavour is mild and not overbearing and often compared to the taste of pea shells. Amaranth Red Army is at its best when the leaves are eaten young.

Sowing Guide

Early Sowing/Module Sowing

Sow 4 - 5 seeds per 4 cm module. Ensure enough heat is introduced for fast germination. Once the seeds start to germinate move to an area with good daylight exposure, a windowsill or warm greenhouse is ideal. When the seedlings are big enough to handle thin to 3 strong seedlings per module.
2 - 3 weeks later plant out into their final growing position. Harden off over 7 - 10 days so the plants get used to the outdoor temperature. Plant at the distance suggested above. Firm the soil around each plant and water well. If the temperature is cool especially during the nights cover the crop with horticultural fleece until growth is strong.

Direct Sowing

Do not sow amaranth too early as it will struggle to grow in cold temperatures and will be susceptible to slug damage. Sow 4 - 5 seeds per station at the depth and row distance suggested above. Cover the seeds with soil and water well.
If the weather turns cold cover the bed with horticultural fleece. When the seedlings are big enough to handle thin to 3 strong seedlings per station.


Growing On

Amaranth needs warmth to thrive, in cool summers the growth will be slow. Water well in dry weather. Weed regularly to keep competing plants under control. One sowing should produce leaves until early autumn if the plants are picked often and kept small. If however the plants are left to grow large this will make the plants run to seed rapidly especially in hot weather.


Harvesting

Pick amaranth leaves when young otherwise larger leaves become tough with age. Avoid picking too many leaves from one plant at one time. The slow growth over cold summers will help to keep the growth steady and the leaves small. Rapid growth in hot summers will produce larger plants with larger leaves unless they are regularly picked. Towards the end of the summer amaranth plants will have produced seeds which can also be eaten.

TIP

The deep red colour of the amaranth leaves adds vibrancy to the salad bowl. For the best flavour and texture harvest the leaves when young.
