The sugar loaf chicory variety Pain De Sucre is self-blanching and does not need to be blanched manually as the tight heads of leaves produced naturally blanch the leaves inside the heart. This will produce a beautiful cream coloured leaf with reduced bitterness. The leaves can be steamed or eaten raw in salads.

Soil Preperation

Add some compost or well rotted manure to the soil a few months before sowing or planting. Remove weeds and add some general purpose organic fertilizer to the bed 1 - 2 weeks before sowing or planting.

Sowing Guide

Early Sowing/Module Sowing

Sow 2 seeds per 4 cm module. Once germination starts reduce the heat and move to an area with good daylight exposure, a windowsill or greenhouse. When the seedlings are big enough to handle thin to one strong seedling per module. Keep the compost moist but do not overwater. 2 - 3 weeks later plant out. Harden off over a few days before planting out. Plant at the distance suggested above.

Direct Sowing

Sow 2 seeds per station 25 cm apart at the depth and row distance suggested above. Cover the seeds with soil and water well. When the seeds are large enough to handle thin to one strong seedling per station.


Growing On

Water well in dry weather. Weed often to remove competing plants. Remove any decaying leaves. By September the plants will be large and should be developing a heart.


Harvesting

Large chicory plants can only tolerate slight frosts and should be harvested by October or November depending on the temperature. Cut the heart with a sharp knife just above soil level. Remove any decaying leaves. Store in a cool frost free damp environment for up to 2 months. The outer leaves may start to dry out or some may start to rot by the end of the two months, however on peeling the outer leaves the heart should be fine.

TIP

To help prevent rotting when conditions get damp, avoid growing plants too close to each other and ensure the area is well ventilated. Remove any rotting leaves.
