Hyssop is an attractive perennial plant ideal for growing in the middle of the herb bed, containers or as a low hedge similar to lavender. In late summer it produces attractive spikes of deep blue flowers which bees, butterflies and hover flies find very attractive. The strong minty-sage flavoured leaves can be added to salads, soups, pork and fish dishes and should be used sparingly as the flavour can be intense.

Add some well rotted manure or compost to the soil a few weeks before sowing. If the soil is heavy clay or the drainage is poor mix in a generous amount of sand and gravel to the soil also. Remove any weeds from the area.

Sow the seeds thinly on the surface of moist compost in trays, modules or pots. Lightly firm the seeds down into the compost but do not cover.
Place in a propagator or clear plastic bag and seal. Do not exclude light as this will aid germination. Germinate at the temperature suggested above.
Once germination has started remove from the propagator or bag and place in a cooler but not cold location. Protect from frost.
When large enough to handle transplant into 7 - 10 cm pots.
Grow on in a frost free greenhouse or cold frame.
Plant out when all risk of frost has passed, harden off over 7 - 10 days before planting out.
Sow 3 - 4 seeds per station, 60 cm apart in rows 60 cm wide at the depth suggested above. The soil should be a fine tilth.
Water the newly sown seeds well.
Thin to one strong seedling per station.
The thinning's can be used to fill gaps or transplanted elsewhere in the garden.
Water the young plants well until established.
Established hyssop plants need very little attention and should only require watering in very dry periods.
Harvesting of the young fresh leaves and stems can start when the plants are established and are growing strong.
The flowers are also edible and have a more delicate flavour.
The leaves can be dried or frozen for later use.
To dry, tie a small bunch of cuttings together. Hang upside down in a cool, dark, dry location with good ventilation.
The stems should be dry in 5 - 6 days. If left to dry for any longer this may effect the flavour.
When dry remove the leaves from the stems and store in an airtight container for up to 18 months. Crush the dried leaves as and when needed just before use.
Hyssop attracts bees, butterflies, hover-flies and other beneficial insects and is a popular flower in the wildlife garden and with beekeepers.
