Anise is known for it's sweet liquorice flavoured leaves and seeds and with it's tiny dainty attractive white flowers it is a welcomed plant in the flower borders as well as the herb garden. The leaves are delicious eaten raw in salads or added to soups, cheese spreads and herbal teas and the tasty seeds can be used in a variety of dishes and bread making.

Uses - Leaves in soups, sauces, salads, flavouring of oils. Seeds used as a condiment, seasoning cakes, breads etc.

Soil Preperation

Add some well rotted manure or compost to the soil a few weeks before sowing or planting. If the soil is heavy clay or the drainage is poor mix in a generous amount of sand and gravel to the soil. Remove any weeds from the area.

Sowing Guide

Early Sowing/Module Sowing

In March - April, sow the seeds thinly on the surface of moist but not sodden compost in trays, pots or modules.
Cover the seeds with a light sprinkling of vermiculite or fine compost.
Place in a propagator or if preferred place in a clear polythene bag and seal. Germinate at the temperature suggested above.
Once the seeds have started to germinate remove from the propagator or bag and place in cooler but not cold conditions. Protect the young seedlings from frost.
Once the seedlings are large enough to handle transplant into 7 - 10 cm pots, preferably biodegradable pots to reduce any root damage when planting out.
Grow on in a frost free greenhouse or cold frame, keeping the compost moist but not sodden.
Plant out when all risk of frost has passed.
Harden off over 7 - 10 days before planting out to reduce shock.

Direct Sowing

In May, sow the seeds thinly (approx. 1 - 2 cm apart) in rows 30 - 45 cm apart in a well prepared seed bed were the plants are to flower. The soil should be a fine tilth.
Cover the seeds with fine soil and water well.
Thin out in stages until the plants are 30 - 45 cm apart. The thinning's can be eaten.

Growing On

Water the young plants well until established.
Water established plants frequently in dry conditions.


Harvesting of leaves can start as soon as the plants are a good size and are growing strong.
Avoid overharvesting when young so that the plants can make a fast recovery.
Seeds will be ready to harvest in autumn after the flower heads have turned a grey-brown colour.
Cut the flower heads and place in a paper bag, leave in a dry, warm location with good ventilation to dry.
Store the dried seeds in an airtight container.


Try leaving a few flower heads to attract birds into the garden, they will love to feast on the remaining seeds.

The 14 day cooling off period.
