This hardy annual with it's mild thyme - like peppery flavoured leaves is a useful and attractive addition to the herb garden. Summer savory is an easy herb to grow and requires very little attention other than a little weeding when young. It makes an excellent companion plant for broad beans as they help to repel black fly.

Soil Preperation

Add some well rotted manure or compost to the soil a few weeks before sowing. If the soil is heavy clay or the drainage is poor mix in a generous amount of sand and gravel to the soil also. Remove any weeds from the area.

Sowing Guide

Early Sowing/Module Sowing

Sow savory seeds thinly on the surface of moist compost in trays, modules or pots.
Lightly cover with some fine compost.
Place in a propagator or clear polythene bag and seal, germinate at the temperature suggested above.
Once germination has started remove from the propagator or bag and place in a cooler but not cold location. Protect from frost.
When the seedlings are large enough to handle transplant into 7 - 10 cm pots.
Grow on in a frost free greenhouse or cold frame.
Plant out when all risk of frost has passed and the plants are growing strong.
Harden off over 7 - 10 days before planting out.

Direct Sowing

Sow the seeds thinly 1 - 2 cm apart in a well prepared seed bed from March - May in rows 35 cm wide at the depth suggested above. The soil should be a fine tilth.
Water the newly sown seeds well. Keep the soil moist especially in dry weather.
Thin in stages until eventually the young plants are 35 cm apart. The thinning's can be eaten.


Growing On

Water the newly planted savory well until established.
Established plants will need watering frequently especially in dry weather or if growing in containers.


Harvesting

Light harvesting can start from 6 - 8 weeks.
Frequent harvests will encourage more leaves to grow.

TIP

The leaves of summer savory are tender enough to be eaten raw in salads unlike winter savory who's leaves are best used for cooking.
