Tatsoi can be harvested as a baby leaf or it can be left to produce a stunning rosette head. The leaves have a mild mustard flavour with a crunchy texture and can be used to liven up salads or added to stir-fries. Tatsoi is very hardy and suitable for growing over the winter months. A fast growing variety producing an abundance of flavoursome dark green round leaves.

The soil needs to be free draining but water retentive. Add some well rotted manure or compost to the bed a few months before sowing or planting. Remove any weeds and slug havens such as stones, rubbish, wood etc. from the area.

Sow 4 - 5 seeds per 4 cm module for cut and come again leaves or sow 2 - 3 seeds per 4 cm module for individual larger plants. As soon as the seeds start to germinate move to an area with good daylight exposure, a windowsill or greenhouse is ideal. When the seedlings are big enough to handle thin to 2 - 3 strong seedlings per module for cut and come again clumps or thin to one strong seedling per module for larger plants.
Keep the compost moist but do not overwater. 2 - 3 weeks later, depending on speed of growth plant out into their final growing position. Harden off over a few days so the plants acclimatise to the outdoor temperature. Plant out at the distance suggested above. Firm the soil around each plant and water well.
Young seedlings are vulnerable to slug attack, ensure the area is free of possible slug havens such as weeds, stones etc. Keep the surrounding soil as dry as possible especially when the seedlings are young to help ward off slugs and snails.
Pak choi can be grown individually or in clumps of plants for smaller cut and come again leaves over a long season. For cut and come again leaves sow 4 - 5 seeds every 20 cm station at the depth and row distance suggested above. For individual pak choi sow 2 - 3 seeds per station, thin to one strong seedling.
Cover the seeds with soil and water well. When the seedlings are big enough to handle thin cut and come again clumps to 2 - 3 strong seedlings per station and for individual larger plants thin to 1 strong seedling per station. Pak choi is a fast growing vegetable and best sown little and often, a fortnightly sowing up until September will keep the kitchen in good supply over the season.
Weed regularly to keep weeds and slug havens under control. Water well and often during hot weather. If growing outdoors overwinter, the plants will need to be protected with a cloche before the first autumn frost arrives.
Container grown pak choi can be easily moved into a greenhouse to overwinter. Remove any damaged or yellowing leaves over the season.
Plants grown in clumps will produce smaller leaves which are ideal for salads etc. The roots are very fragile and shallow and easily uprooted. Avoid pulling on the stems when harvesting. For regular pickings of leaves, carefully cut the larger outer stems with a sharp knife.
Pak choi is a fast growing plant, however over the winter months the growth will slow down and pickings should be light up until February to ensure the plants survive the winter.
By February the plants will be growing strong again and larger pickings will be possible again. The leaves can be harvested regularly up until April when the plants naturally run to seed.
To harvest whole plants simply twist and pull on the whole plant. Trim the roots, pak choi will keep in the fridge in a polythene bag for up to 1 week, however they are best eaten when fresh.
Pak choi under stress brought on by drought will bolt (run to seed) in no time. Keep the soil moist, it is also important to grow this vegetable at the correct time of year.
