Clary Sage has many uses, from flavouring oils, wines, medicinal purposes, potpourri to making tasty fritters with the leaves. The architectural plants with their branching stems covered with large aromatic pink and white bracts make a stunning display in the flower beds. These beautiful low maintenance plants need very little attention and will thrive in poor soils with very little water and does not need staking. Excellent for cutting and a magnet for bees.

Uses - Medicinal. Leaves in omelettes, fritters, stews, jelly, flavouring oils and wines, potpourri etc.
Add some well rotted manure or compost to the soil a few weeks before sowing. If the soil is heavy clay or the drainage is poor mix in a generous amount of sand and gravel to the soil also. Remove any weeds from the area.

Sow the seeds thinly on the surface of moist compost in trays, modules or pots.
Cover with compost or vermiculite.
Place in a propagator or clear plastic bag and seal, germinate at the temperature suggested above.
Once germination has started remove from the propagator or bag and place in a cooler location.
When the seedlings are large enough to handle transplant into 7 - 10 cm pots.
Grow on in a frost free greenhouse or cold frame over the winter months.
Pot on into larger pots if required and before they become root bound.
The clary plants will start to grow again in spring.
Plant out when all risk of frost has passed.
Harden off over 7 - 10 days before planting out.
In June - August, sow the seeds thinly 1 - 2 cm apart in a well prepared seed bed where the flowers are to grow the following spring in rows 30 cm wide at the depth suggested above. The soil should be a fine tilth.
Water the newly sown seeds well. Keep the soil moist especially in dry weather.
Thin to 30 cm apart. Strong thinning's can be transplanted elsewhere.
Water the young plants well until established.
Clary becomes dormant over the winter months and will reappear in spring.
Water established plants frequently in dry conditions. Pot grown clary will need watering more frequently.
The short lived plants will die off soon after flowering has ended in it's second year.
Harvest the larger leaves as and when needed once the plants are established.
Avoid overharvesting so that the plants can recover.
Clary sage make stunning fresh and dried flower arrangements and have a long vase life.
