Winter Savory is similar to summer savory however it tends to have thicker leaves with a stronger thyme - like peppery flavour. These attractive semi - evergreen perennial's make fine ornamental plants in the flower borders, producing masses of attractive dainty flowers during the summer months. Savory leaves are particular good when added to bean dishes and stuffing's. The leaves can also be dried.

Uses - Used to flavour meat, rice, bean dishes, stuffing's, flavouring vinegar etc.
Add some well rotted manure or compost to the soil a few weeks before sowing. If the soil is heavy clay or the drainage is poor mix in a generous amount of sand and gravel to the soil also. Remove any weeds from the area.

Sow savory seeds thinly on the surface of moist compost in trays, modules or pots.
Lightly cover with some fine compost.
Place in a propagator or clear polythene bag and seal, germinate at the temperature suggested above.
Once germination has started remove from the propagator or bag and place in a cooler but not cold location. Protect from frost.
When the seedlings are large enough to handle transplant into 7 - 10 cm pots.
Grow on in a frost free greenhouse or cold frame.
Plant out when all risk of frost has passed and the plants are growing strong.
Harden off over 7 - 10 days before planting out.
Seeds are best started undercover.
Water the newly planted savory well until established.
Established plants will need watering frequently especially in dry weather or if growing in containers.
Feed moderately over the growing season however avoid over fertilizing. The plants will produce masses of leaves however the flavour will be disappointing.
Winter savory will benefit from being trimmed with garden shears after the plants have finished flowering. This will help to keep the plants tidy and productive.
The shrubby plants will become dormant over the winter months. Do not cut any stems that appear dead as these stems will produce fresh leaves again in spring.
Light harvesting can start from 6 - 8 weeks after planting out. Established plants can be harvested from spring to autumn.
Frequent harvests will encourage more leaves to grow.
When trimming winter savory, avoid cutting too hard back into old wood.
