Thyme has small dark green scented leaves which are ideal for cooking with poultry, pork, stews and for flavouring soups, dressings, sauces, stuffing's and adding to bouquet garni. The attractive low growing perennial can be used as edging in borders or as ground cover and is ideal for growing in containers on the patio.

Add some well rotted manure or compost to the soil a few weeks before sowing. If the soil is heavy clay or the drainage is poor mix in a generous amount of sand and gravel to the soil also. Remove any weeds from the area.

Sow the thyme seeds thinly on the surface of moist compost in trays, modules or pots.
Cover with a fine layer of fine compost or vermiculite.
Place in a propagator or clear plastic bag and seal, germinate at the temperature suggested above. Do not exclude light as this will aid germination.
Once germination has started remove from the propagator or bag and place in a cooler but not cold location. Protect from frost.
When the seedlings are large enough to handle transplant into 7 - 10 cm pots.
Grow on in a frost free greenhouse or cold frame.
Plant out when all risk of frost has passed and the plants are growing strong.
Harden off over 7 - 10 days before planting out.
Direct sowing is not recommended.
Water the newly planted thyme well until established.
This popular herb needs very little attention once established and will need watering only when the soil is dry. The plants are reasonably tolerate to dry conditions.
Trim the plants back after flowering with garden shears to maintain a tidy and bushy habit.
The plants will benefit from a generous mulch of compost in autumn to help protect the roots from severe winter frosts.
Harvest the leaves when required, however the flavour will be at it's best just before flowering.
The leaves can be enjoyed fresh or dried. Dried thyme tends to have a more intense flavour.
When trimming, avoid cutting too hard back into old wood.
